The idea behind freeze drying is to remove the water from the acai fruit, while keeping the nutritional structure of it intact. Freeze dried Acia has gone through a special process that actually de-hydrates the fruit. Most fruits, Acai included, are very sensitive to heat. When freeze drying, moisture is removed from the Acai using a very low temperature (-20C).
