All teas from the camellia plants contain compounds known as polysaccharides, which play an important role in the prevention of degenerative diseases, such as heart disease and diabetes type II. In scientific studies, polysaccharides have been shown to reduce the stickiness of blood cells. Scientists refer to that as platelet aggregation. It is the stickiness of the cells that causes the formation of blood clots.

They have also been shown to improve HDL or “good" cholesterol levels, while lowering LDL or bad cholesterol. This helps to reduce the risk of hardening of the arteries, also known as atherosclerosis, a degenerative heart disease. The plant compounds seem to stimulate the immune system, reduce inflammation and prevent tumor formation. They may help to lower blood sugar levels, as well as blood pressure and have been shown to improve the function of the pancreas. All of these factors are important for the prevention of type II diabetes.

There are other compounds found in green tea and health benefits are associated with them as well. Catechins, for example, are unique antioxidants found only in green teas, some kinds of cocoa and sometimes in dark chocolates. These catechins are believed to greatly reduce our cancer risk, particularly cancers of the stomach and throat.

Supplements containing the catechins have been shown to increase the number of calories burned during exercise, as well as insulin sensitivity, another important factor in type II diabetes. When you consider all of this, it seems that drinking green tea and health are nearly synonymous.

There are many different compounds found in a variety of plants. Some of them are common vitamins like A, C and E. Others are minerals, like potassium, calcium and magnesium. Some are antioxidants. Others are anti-glycation factors.

Protein and sugar molecules can stick together in the same way that blood platelets can. When this happens, the protein cannot be used by the cells and the sugar or glucose cannot be used by for energy.

As the molecules degrade they cause the formation of toxic byproducts that stimulate free radical activity and cause damage throughout the body.

Although, drinking green tea and health improvement may be connected, the compounds found in the plant are not anti-glycation factors. The only nutrient known to effectively prevent glycation is carnosine.
