Restaurants in Delhi will offer these delicacies across over 24 stalls: shami and seekh kebabs will be char-grilled before your eyes, tangy chana-bhaturas, aloo-gobi-mooli- kaju ke parathe patted with a dollop of white butter, nagori / moong daal ka halwa, bedmis, poori-aloo, Karim’s tikkas, chilled rabdi, Giani’s (or Roshan’s) kulfi smothered under a mound of falooda and hot pakoras / jalebis fried on the spot.

Nothing beats the dexterity of the deft chaatwalas who serve you golguppas, mix papdi chaat, sprinkle secret masalas on the fruit chaat or serve you hot khasta Jodhpuri kachoris and aloo tikkis with a smear of mint and tamarind chutney all without halting for a breath!

The by-lanes of Old Delhi have always been renowned for this traditional and ever-popular Dilli ka khana, with the wafting aromas and secret recipes. It is only recently that the authentic food of the walled city has taken a step forward and moved to Delhi Haat, where the Dilli ka khana food festival is an eagerly awaited affair by the foodies of Delhi, tourists and by those visiting Delhi.
