It doesn't take much to throw a good party, all you need is good food, good people and good conversation. This basic pasta sauce recipe can be multiplied and spread into various buffet style dishes quite easily. For example, you can choose to make a tray of meatballs with sauce. You can also make lasagna, manicotti, stuffed shells or baked ziti with this same sauce recipe. Obviously, all four dishes and the meatballs might be a bit much too Italian for some, but it just goes to show you, you can do it yourself and save a lot of money on caterers in the meantime.
So whether you have a little one graduating, a college graduate, a beauty school graduate or someone heroicly graduating from the Police Academy, this sauce will be delicious and the hit of the party!
the simple sauce recipe
2 small onions diced finely
8 cloves of garlic, smashed and diced finely
1 lb. of chopmeat
1 6 pack of Italian style sausage
2 large cans of crushed tomatoes
1 empty can of crushed tomatoes filled with cold water
2 lage cans of Luigi vitelli tomato sauce (the can that is the same size can as the crushed tomatoes)
2 cans of Luigi Vitelli tomato paste
4 tsps. of Italian seasoning
4tsps. of Dried Basil
1 tsp. Dried Oregano
1 tsp. pepper
2 -TBSPS. Sugar
1 tsp. garlic powder
1 tsp. onion pepper
Directions: In a frying pan, saute the onion first, when golden add the garlic . Do not burn the garlic or you will have a bitter sauce, lightly saute the garlic for a minute, just until the aroma is released. Add all of can tomato ingredients, the water and the seasonings. Bring to a boil for a few seconds and then, simmer it uncovered on a low flame for two hours. In the meantime fry chopmeat, drain and add to simmering sauce and do the same with the sausage.
This sauce can be the basic sauce recipe for all of the buffet style party foods mentioned above.
